If I Wanted To Downgrade My Laptop From Windows 8 To Windows 7...
...would it affect anything I have stored on it?
I need a shot again, that sweet adrenaline.

When you update or downgrade an operating system, you don't lose your files unless you play around with drive partitions and format them. In most cases your files will be put in a "Windows Old" folder on the root of your fresh windows installation.
Alternatively there is a profile transfer tool you can use that puts your selected profiles into a file you can move to another drive (ex: usb stick).
Then you load this file into the fresh installation and your profiles are now intact under a new windows platform or installation

I'm pretty sure there's no way to downgrade Windows without losing all your programs (aka, doing a clean install). Of course, as long as you back up your files beforehand you should be mostly good.
It's generally a good idea to do a clean install whenever you upgrade Windows as well, but you don't have to.
